Split Pea and Zucchini Soup

This is a vegetarian soup that is very good. Split peas have a great buttery flavor that really comes out durring the simmering time. |

INGREDIENTS:
- 2 cup(s) , Yellow Split Peas Soaked in Cold Water Overnight
- 1 medium , Onion Finely Chopped
- 1 teaspoon(s) , Sunflower Oil
- 2 medium , Zucchini Finely Diced
- 3 3/4 cup(s) , Vegetable Stock
- 1/2 teaspoon(s) , Ground Turmeric
- 0 to taste , Salt and Pepper

Rinse off soaked peas. Cook the onion in the oil until tender, add zucchini all but 1 handful and cook for about 3 minutes. Add the stock and turmeric. Bring to a boil and then reduce to a simmer for 40 minutes. Season with Sal and Pepper. Before the soup is done, bring a small pot of water to a boil and add reserved zucchini and cook for 1 minute. Drain and add to the soup and serve. |
