INGREDIENTS:
- 2 tablespoon(s) , Butter
- 3 medium , Shallots Finely Chopped
- 3 cup(s) , Fresh Peas Shelled
- 4 tablespoon(s) , Heavy Cream
- 0 to taste , Salt and Pepper
- 0 to taste , Croutons

| Instructions: |

Cook shallots in butter for about 3 minutes. Add 2 cups of water, the peas, salt and pepper to taste. Cover and simmer for about 15 minutes. When peas are soft, ladle them into a food processor with a little bit of the cooking liquid and process until smooth. Return to pan, add cream and heat through, do not boil. Season with salt and pepper and garnish with croutons. |
