Fresh Pea Soup

 This is a very refreshing soup from France where peas were cultivated in the market gardens.

INGREDIENTS:
  • 2 tablespoon(s) , Butter
  • 3 medium , Shallots Finely Chopped
  • 3 cup(s) , Fresh Peas Shelled
  • 4 tablespoon(s) , Heavy Cream
  • 0 to taste , Salt and Pepper
  • 0 to taste , Croutons

Instructions:
Cook shallots in butter for about 3 minutes. Add 2 cups of water, the peas, salt and pepper to taste. Cover and simmer for about 15 minutes. When peas are soft, ladle them into a food processor with a little bit of the cooking liquid and process until smooth. Return to pan, add cream and heat through, do not boil. Season with salt and pepper and garnish with croutons.
