Curried Celery Soup

 This is an unusual combination of flavors. This is a pure vegetarian soup.

INGREDIENTS:
  • 2 teaspoon(s) , Olive Oil
  • 1 medium , Onion Chopped
  • 1 medium , Leek Washed and Sliced
  • 1 1/2 pound(s) , Celery Chopped
  • 1 tablespoon(s) , Curry Powder
  • 8 ounces , Potatoes Diced
  • 3 3/4 cup(s) , Vegetable Stock
  • 1 medium , Bouquet Garni
  • 2 tablespoon(s) , Fresh Mixed Herbs Chopped
  • 0 to taste , Salt
  • 1 1/2 teaspoon(s) , Celery Seeds

Instructions:
Heat Oil in large saucepan. Add onion, leek and celery, cover and cook gently for 10 minutes stirring occasionally. Add curry and cook for 2 minutes. Add potatoes, stock and bouquet garni. Cover, bring to a boil then reduce and simmer for 20 minutes. Remove and discard the bouquet garni. Cool slightly and puree in a food processor. Add herbs and process briefly. Return to the saucepan to heat through. Serve garnished with celery seeds.
