INGREDIENTS:
- 6 slice(s) , Eggplant
- 1 small , Red Bell Pepper Seeded
- 1 small , Yellow Bell Pepper Seeded
- 6 slice(s) , Red Onion
- 1 1/2 tablespoon(s) , Olive Oil
- 1/4 cup(s) , Mayonnaise
- 1 tablespoon(s) , Fresh Parsley Minced
- 1 teaspoon(s) , Lemon Zest Grated
- 1 teaspoon(s) , Garlic Minced
- 1/2 teaspoon(s) , Balsamic Vinegar
- 4 slice(s) , Whole Wheat Bread
- 6 slice(s) , Mozzarella Cheese
- 1 cup(s) , Wood Chips

| Instructions: |
Prepare a medium fire in the grill. Coat the vegetables with olive oil. When the coals are covered in gray ash, add the chips to the fire. If the fire flares up, mist the chips with water. When the chips start to smoke, place the vegetables on the cooking grid directly over the fire.
Grill, turning as needed, until eggplant and onion are tender and browned, about 6 to 8 minutes, and peppers are charred on the outside, about 10 minutes. Peel peppers and cut into strips.
Combine mayonnaise, parsley, lemon zest, garlic and vinegar. Spread mixture on one side of each slice of bread. In sequence, layer eggplant, peppers, onion and Mozzarella on 2 slices of bread, and top with remaining slices. |
