Baked Mashed Potatoes

 This dish is just like a twice-baked potato but better.

INGREDIENTS:
  • 2 pound(s) , Potatoes
  • 2 whole , Eggs Beaten
  • 2 slice(s) , Bread Cut into Cubes
  • 2 tablespoon(s) , Butter
  • 2 medium , Stalks Celery Diced
  • 1 small , Onion Diced

Instructions:
1. Preheat oven to 350*F (175*C). Grease a 2-quart casserole dish.
2. Cook and mash potatoes; stir in beaten eggs and bread.
3. Saute celery and onion in butter. Stir into potato mixture. Place in prepared casserole dish. Bake for 45 minutes or until brown.
