INGREDIENTS:
- 1 cup(s) , Ground lamb
- 2 tablespoon(s) , Fresh mint leaves Chopped
- 2 tablespoon(s) , Fresh cilantro Chopped
- 2 tablespoon(s) , Fresh oregano Chopped
- 2 tablespoon(s) , Garlic Chopped
- 1 tablespoon(s) , Sherry
- 1 whole , 10-12 Pound Goose
- 8 whole , Apples Peeled and Quartered
- 1 tablespoon(s) , Butter
- 1 tablespoon(s) , Salt
- 1 cup(s) , Water Boiling

Wash and dry goose. Stuff with apples. Tie legs with string, secure neck skin onto back with a skewer - wings behind back. Rub the bird with salt and prick all over with a fork. Spread butter over breast and place on rack of roasting pan. Add boiling water. Place in oven, preheated to 375ºF. Cook Until 170 degrees internal temp is reached. Once done, remove strings and skewers, place in serving platter. Serve with pan drippings after fat is removed from drippings.. |
