I really enjoy using Asian Ingredients. They have great flavor and aren't used as often. This salad is a great idea for a meal using leftover turkey. |

INGREDIENTS:
- 2 cup(s) , Leftover turkey
- 1 tablespoon(s) , Soy Sauce
- 1 tablespoon(s) , Dry Sherry
- 1 tablespoon(s) , Vegetable Oil
- 1 tablespoon(s) , Sesame Oil
- 1 teaspoon(s) , Fresh Ginger Minced
- 2 medium , Green Onions Thinly Sliced
- 0 to taste , Salt and Pepper
- 1 large , Head of Belgian Endive Separated in Spears
- 1/4 cup(s) , Red Bell Pepper Finely Diced
- 2 tablespoon(s) , Cilantro or Peanuts

| Instructions: |
Cut the turkey into small cubes, making sure to remove all fat and skin. Make a dressing of the soy sauce, sherry, oils and ginger and toss with the turkey and green onions. Season to taste with salt and pepper
Center the salad on a plate and surround with endive spears. Garnish the salad with red pepper and cilantro or peanuts. |
