Garlic Potato Skins w/Onion Spinach Dip

 Garlic Potato Skins makes a great beginning to a meal and add the Onion Spinach Dip and it just increases the enjoyment.

INGREDIENTS:
  • 3 pound(s) , Baking Potatoes
  • 1 large , Garlic
  • 6 tablespoon(s) , Unsalted Butter Softened
  • 1 teaspoon(s) , Salt
  • 1/4 teaspoon(s) , Black Pepper

Instructions:
Preheat oven to 350 Prick each potato with a fork. Cut off and discard the top fourth of the head of garlic. Wrap in foil and bake potatoes for 50 minutes- 1 hour. Reomve potatoes, but let garlic cook for an additional 15 minutes. Then remove garlic to cool as well. Increase oven temp to 425. Half potatoes lengthwise and scoop out pulp (save for another use). Squeeze garlic into a small bowl and mash with butter, salt and pepper using a fork. Place about a 1/2 tsp of each on each skin and spread evenly. Bake an addtional 25 minutes. Serve with the onion and spinach dip.
