INGREDIENTS:
- 2 large , Leeks Chopped
- 3 large , Celery Stalks Chopped
- 1 large , Onion Chopped
- 1 cup(s) , Mushroom Stalks
- 1/8 cup(s) , Tomato Peelings
- 3 whole , Bay Leaves
- 2 large , Carrots Chopped
- 1 bunch , Parsley Stems
- 3 sprig(s) , Fresh Thyme
- 10 whole , Black Peppercorns
- 3 quart(s) , Cold Water

Put all ingredients into a large pot. Bring to a boil and then simmer for 30 minutes. Let cool, strain and discard the vegetables. |
