Creamy Crab and Spinach Soup
Submitted by: Jimmy
This dish is kinda heavy, you can use milk instead of cream, just try to avoid skim milk when cooking

INGREDIENTS:
  • 8 ounces , Alaskan King Crabmeat
  • 1 package , Frozen Chopped Spinach
  • 2 cup(s) , Chicken Broth
  • 2 cup(s) , Cream or Half and Half
  • 1/2 cup(s) , Onion Chopped
  • 3 tablespoon(s) , Butter
  • 2 tablespoon(s) , Flour
  • 1/8 teaspoon(s) , Black Pepper
  • 1/8 teaspoon(s) , Ground Nutmeg

Instructions:
Slice Crab, reserve liquid. Cook spinach according to package instructions; drain. Melt butter in large saucepan, then add onion and saute until tender; blend in flour and spices. Gradually add chicken broth, stirring constantly; heat to boiling. Puree spinach mixture in blender or food processor, then add half-and-half, Crab liquid and Crab. Heat thoroughly - but DO NOT BOIL.
