Cold Leek and Potato Soup

 The French call this vichyssoise. It is a good soup, the longer it sits, the more the flavors come together.

INGREDIENTS:
  • 1 pound(s) , Potatoes Peeled and Cubed
  • 6 1/4 cup(s) , Vegetable Stock
  • 4 medium , Leeks Trimmed
  • 3/4 cup(s) , Sour Cream
  • 0 to taste , Salt and Pepper
  • 3 tablespoon(s) , Fresh Chives Snipped

Instructions:
Bring potatoes and stock to a boil. Reduce heat and simmer for 20 minutes. Thouroughly wash the leeks to remove any sand and slice thinly. when potatoes are getting tender, add the leeks and season with salt and pepper. Simmer 15 minutes. Puree in a food processor until very smooth. Cool completely and serve with a dollop of sour cream and chives
