Beer and Potato Soup

 This is a classic Irish soup

INGREDIENTS:
  • 2 tablespoon(s) , Butter
  • 1 teaspoon(s) , Garlic Minced
  • 1 bunch , Scallions Chopped
  • 1 large , Celery Stalk Diced
  • 6 cup(s) , Potatoes Boiled and Diced
  • 32 ounces , Beer
  • 1 tablespoon(s) , Sugar
  • 1 tablespoon(s) , Chicken Bouillon
  • 64 ounces , Chicken Stock
  • 0 as needed , Roux
  • 4 cup(s) , Heavy Cream
  • 0 to taste , Salt and Pepper

Instructions:
Sauté garlic in butter for 1 minute, add vegetables and saute for 3-5 minutes or until tender. Add potatoes and beer and bring to a boil. Mash potatoes against sides of pot. Add sugar, stock, boullion and salt and pepper. Add roux until thick. Add cream, stir and serve.
