INGREDIENTS:
- 2 teaspoon(s) , Olive Oil
- 1 medium , Onion Chopped
- 1 medium , Leek Washed and Sliced
- 1 1/2 pound(s) , Celery Chopped
- 1 tablespoon(s) , Curry Powder
- 8 ounces , Potatoes Diced
- 3 3/4 cup(s) , Vegetable Stock
- 1 medium , Bouquet Garni
- 2 tablespoon(s) , Fresh Mixed Herbs Chopped
- 0 to taste , Salt
- 1 1/2 teaspoon(s) , Celery Seeds

Heat Oil in large saucepan. Add onion, leek and celery, cover and cook gently for 10 minutes stirring occasionally. Add curry and cook for 2 minutes. Add potatoes, stock and bouquet garni. Cover, bring to a boil then reduce and simmer for 20 minutes. Remove and discard the bouquet garni. Cool slightly and puree in a food processor. Add herbs and process briefly. Return to the saucepan to heat through. Serve garnished with celery seeds. |
