Creamy Turkey Soup

 This is a simple soup that can be made in no time.

INGREDIENTS:
  • 2 tablespoon(s) , Butter
  • 1/2 cup(s) , Onion Chopped Fine
  • 2 1/2 cup(s) , Turkey Broth
  • 1/2 cup(s) , Carrots Thinly Sliced
  • 1/2 cup(s) , Celery Thinly Sliced
  • 1 teaspoon(s) , Salt
  • 1/4 teaspoon(s) , Pepper
  • 2 cup(s) , Turkey Cubed
  • 1/3 cup(s) , Cornstarch
  • 3 cup(s) , Milk
  • 2 tablespoon(s) , Fresh Parsley Chopped

Instructions:
In a 4 quart saucepan, melt butter over medium heat. Add onion, stirring frequently, cook 2 minutes or until tender. Stir in the broth, carrots, celery, salt and pepper. Bring to a boil. Reduce heat and simmer 5 minutes or until the vegetables are tender-crisp. Add turkey. In medium bowl, stir together the cornstarch and milk until smooth. Add to turkey mixture. Stirring constantly, bring to a boil over medium heat and boil 1 minute. Stir in parsley. Makes 7 cups.
