Smoked Sausage Gumbo

 This is a great meal to warm you up.

INGREDIENTS:
  • 1 can(s) , Diced TOmatoes Undrained
  • 1 cup(s) , Chicken Broth
  • 1/4 cup(s) , Flour
  • 2 tablespoon(s) , Olive Oil
  • 3/4 pound(s) , Polish Sausage Cut in 1/2 inch pieces
  • 1 medium , Onion Diced
  • 1 medium , Green Bell Pepper Diced
  • 2 medium , Celery Ribs Chopped
  • 1 medium , Carrot Peeled and Chopped
  • 2 teaspoon(s) , Dried Oregano
  • 2 teaspoon(s) , Dried Thyme
  • 1/8 teaspoon(s) , Red Pepper Flakes
  • 0 as needed , Rice Cooked
  • 0 to taste , Parsley Chopped

Instructions:
Combine tomatoes with juice and broth in a slow cooker. Sprinkle flour evenly over the bottom of a skillet. Cook over high heat for 3 minutes without stiring. Stir in oil and cook 3 more minutes. Add remaining ingredients except rice and parsley, stir, cover and cook on low for 5 hours. Serve over cooked rice and garnish with parsley
