Tomato Spinach and Red Onion Salad

 This is a great summertime recipe of spinach, horseradish, red onion and tomato topped with vinegrette

INGREDIENTS:
  • 4 cup(s) , Fresh Spinach Leaves Washed, Dried and Stemmed
  • 4 medium , Tomatoes Sliced 1/4 inch thick
  • 2 medium , Red Onions Thinly Sliced in Rings
  • 1 cup(s) , Fresh Mushrooms Sliced
  • 0 to taste , Salt
  • 4 tablespoon(s) , Olive Oil
  • 1 1/2 tablespoon(s) , Red Wine Vinegar
  • 1/2 teaspoon(s) , Pepper
  • 1 tablespoon(s) , Prepared Horseradish

Instructions:
Arrange a bed of spinach leaves on a platter. Place the slices of tomatoes over it, and the oven rings over the tomatoes. Sprinkle salt evenly over all. Combine the oil, vinegar, pepper and horseradish in small bowl. Beat until blended. Pour the dressing over the vegetables and serve. Serves 4.
