Crab and Fresh Pea Salad

 The crisp clean flavored peas go excellent in this crab salad

INGREDIENTS:
  • 1/2 pound(s) , Crab Meat Cooked
  • 2 medium , Scallions Finely Chopped
  • 1/4 medium , Cucumber Finely Diced
  • 1 medium , Lime Juices and Zest Of
  • 5 tablespoon(s) , Fresh Peas Shelled
  • 4 tablespoon(s) , Olive Oil
  • 2 tablespoon(s) , Coriander Leaves Finely Chopped
  • 1 tablespoon(s) , White Wine Vinegar
  • 1 tablespoon(s) , Mint Leaves Chopped
  • 2 teaspoon(s) , Fish Sauce
  • 2 large , Lettuce Leaves

Instructions:
Put lime juice and lime in a mixing bowl and add olive oil, vinegar and fish sauce; stir in peas and cucumber, spring onion and herbs; season with salt and pepper to taste. Place some lettuce leaves on each plate; toss Crab Meat gently in the dressing, then pile on top of the lettuce. Serve with brown bread and butter.
