INGREDIENTS:
- 1 large , Red Bell Pepper Diced
- 1 large , Yellow Bell Pepper Diced
- 2 medium , Onions Quartered
- 2 medium , Zucchini Julienned
- 12 medium , Cherry Tomatoes
- 1/2 cup(s) , Extra Virgin Olive Oil
- 2 large , Garlic Cloves Crushed
- 1 tablespoon(s) , Balsamic Vinegar
- 3 tablespoon(s) , Fresh Parsley Minced
- 0 to taste , Salt and Pepper

| Instructions: |
blanch the vegetables in boiling water for 2-3 minutes and drain.
Heat the olive oil in a large frying pan, add the garlic and sauté until slightly golden in color.
Add the vegetables and cook over medium heat for at least 10 minutes.
Season to taste with oil and balsamic vinegar and garnish with the fresh parsley. Adjust salt and pepper if desired. Serve immediately or as a cold side dish. |
