This makes a great Italian dinner. It is easy to make and the spinach and ricotta go great together. |

INGREDIENTS:
- 8 ounces , Lasagna Noodles Cooked
- 2 tablespoon(s) , Olive Oil
- 1 medium , Onion Finely Chopped
- 10 ounces , Frozen Chopped Spinach Thawed and Squeezed Dry
- 1 cup(s) , Ricotta Cheese
- 1/4 cup(s) , Parmesan Cheese
- 1/2 teaspoon(s) , Salt
- 1/4 teaspoon(s) , Black Pepper
- 1 large , Egg Slightly Beaten
- 4 ounces , Ham Baked and Sliced into Thin Strips
- 16 ounces , Tomato Sauce
- 3 large , Garlic Cloves Minced
- 3 tablespoon(s) , Fresh Parsley Chopped

| Instructions: |
In a large skillet heat the olive oil over medium heat, add the onion and garlic until soft then add the drained spinach until it is heated all the way through. Transfer to a large bowl and cool slightly. Stir in the ricotta, Parmesan, salt, pepper, and egg until well combined.
Lay the noodles flat and spread 3 tbsp. Of the spinach mixture on top each. Arrange the ham on top of the spinach mixture and tightly roll up each noodle. Place the rolls seams side down, in the baking dish.
Ladle the sauce around the lasagna and over the top, cover with foil and bake at 350° for 15 minutes, remove the foil and bake for 5 more minutes. Sprinkle the rolls with grated Parmesan and chopped parsley. |
