INGREDIENTS:
- 8 large , Tomatoes
- 0 to taste , Salt and Peper
- 0 as needed , Olive Oil
- 1 whole , Mozzarella Cheese
- 4 large , Taggia Olives
- 8 large , Basil Leaves
- 1 large , Garlic CLove
- 0 as needed , Oil for Frying

| Instructions: |
Wash the tomatoes then blanch for a few seconds in boiling water. Peel them, cut them into 8 quarters and remove the seeds. Blend in the mixer for 35 seconds and pass through the food mill.
Place in a pan and heat on low heat, season with salt and pepper and add a teaspoon of olive oil in which you will have placed a crushed garlic overnight. Divide the tomato cream onto four white plates. Dice the mozzarella and place six dice in each plate with 4 pitted olives (preferably black Taggia olives from Liguria). In the centre place 2 basil leaves fried for a few seconds in very hot oil and dried on kitchen paper. |
