Minestrone Soup

 Minestrone Soup is a wonderful Italian treat. Great served with Garlic Bread Sticks and Salad.

INGREDIENTS:
  • 1 pound(s) , Beef Round Or Chuck Boneless
  • 1/4 teaspoon(s) , Thyme
  • 1/4 teaspoon(s) , Basil
  • 1 medium , Onion Chopped
  • 1/8 teaspoon(s) , Oregano
  • 2 1/2 cup(s) , Water
  • 1 cup(s) , Macaroni Shells
  • 21 ounces , Beef Broth
  • 1 cup(s) , Carrots Sliced
  • 16 ounces , Whole Tomatoes In Juice
  • 1 cup(s) , Celery Sliced
  • 1/2 cup(s) , Leeks Sliced
  • 1 pieces , Bay Leaf
  • 15 ounces , Dark Red Kidney Beans
  • 1/2 teaspoon(s) , Celery Salt
  • 1/2 teaspoon(s) , Onion Powder

Instructions:
Cut beef into 1/2-inch cubes. Brown along with onion in 2 tablespoons vegetable oil in a 5-quart saucepan, or Dutch oven. Add water, broth, tomatoes and their liquid; carrots, celery, leek, bay leaf and seasonings. Bring to a boil. Reduce heat; cover and simmer for 1 hour. Add macaroni and continue simmering 5 minutes. Add kidney beans, continue simmering for 5 minutes.
