Italian Lentil and Pasta Soup

 This soup is very filling, easy to cook and tastes great.

INGREDIENTS:
  • 1/4 cup(s) , Olive Oil
  • 1 large , Carrot Peeled and Diced
  • 1 large , Celery Rib Diced
  • 1 small , Onion Chopped
  • 2 large , Garlic CLoves Minced
  • 1 tablespoon(s) , Dried Italian Seasoning
  • 2 cup(s) , Dried Lentils
  • 8 cup(s) , Chicken Broth
  • 1 teaspoon(s) , Salt
  • 1/4 teaspoon(s) , Pepper
  • 2 cup(s) , Small Shaped Pasta Cooked
  • 1/4 cup(s) , Romano Cheese Grated

Instructions:
In a large saucepan, heat olive oil and saute the carrot, celery, and onion. Cook for 3-5 minutes until soft. Add garlic, seasoning and lentils. Stir; cook 30 seconds. Add broth, salt and pepper. Cover; simmer for 30 minutes on low heat until lentils are tender. Add cooked pasta to lentils, stir to combine and seve with grated cheese on top. Serves 6.
