INGREDIENTS:
- 1 large , Eggplant
- 1 pound(s) , Ground Beef
- 1/4 cup(s) , Mushrooms Chopped
- 1/2 cup(s) , Tomato Juice
- 0 to taste , Salt Pepper and Garlic

| Instructions: |

Cut eggplant in half lengthwise, boil 15 minutes. Drain. Scoop center and save. Cook meat, add mushrooms, seasonings; mix well. Add scooping. Place in eggplant shells, top with 1/2 cup tomato juice. Bake 15 to 20 minutes. |
