Italian Stuffed Eggplant

 Eggpland stuffed with ground beef, mushrooms and tomato juice and baked.

INGREDIENTS:
  • 1 large , Eggplant
  • 1 pound(s) , Ground Beef
  • 1/4 cup(s) , Mushrooms Chopped
  • 1/2 cup(s) , Tomato Juice
  • 0 to taste , Salt Pepper and Garlic

Instructions:
Cut eggplant in half lengthwise, boil 15 minutes. Drain. Scoop center and save. Cook meat, add mushrooms, seasonings; mix well. Add scooping. Place in eggplant shells, top with 1/2 cup tomato juice. Bake 15 to 20 minutes.
