Submitted by: Jimmy
Onion topped with balsamic, italian seasoning and parmesan cheese and baked.

INGREDIENTS:
  • 4 medium , Onions
  • 2 tablespoon(s) , Olive Oil
  • 2 tablespoon(s) , Balsamic Vinegar
  • 1/4 cup(s) , Fresh Parsley
  • 1/4 cup(s) , Parmesan Cheese Grated
  • 1/4 teaspoon(s) , Salt
  • 1/4 teaspoon(s) , Fresh Ground Pepper
  • 1/8 teaspoon(s) , Italian Seasoning
  • 1/4 cup(s) , Fresh Bread Crumbs

Instructions:
Preheat oven to 350 degrees. Cut onions in half crosswise. Trim ends so onions stand flat. Scoop out center of each onion half with melon baller and reserve. Pour 1 tablespoon olive oil into baking dish. Add onions, turning to coat. Arrange cut sides up; drizzle with vinegar. Cover dish with foil and bake 45 minutes or until tender.

Meanwhile, mince reserved onion centers. Transfer to small bowl and stir in remaining 1 tablespoon olive oil and parsley, bread crumbs, Parmesan, salt, pepper and Italian seasoning. Mound mixture evenly in center of each onion half and bake uncovered 20 minutes or until golden.
