INGREDIENTS:
- 4 medium , Onions
- 2 tablespoon(s) , Olive Oil
- 2 tablespoon(s) , Balsamic Vinegar
- 1/4 cup(s) , Fresh Parsley
- 1/4 cup(s) , Parmesan Cheese Grated
- 1/4 teaspoon(s) , Salt
- 1/4 teaspoon(s) , Fresh Ground Pepper
- 1/8 teaspoon(s) , Italian Seasoning
- 1/4 cup(s) , Fresh Bread Crumbs

Preheat oven to 350 degrees. Cut onions in half crosswise. Trim ends so onions stand flat. Scoop out center of each onion half with melon baller and reserve. Pour 1 tablespoon olive oil into baking dish. Add onions, turning to coat. Arrange cut sides up; drizzle with vinegar. Cover dish with foil and bake 45 minutes or until tender.
Meanwhile, mince reserved onion centers. Transfer to small bowl and stir in remaining 1 tablespoon olive oil and parsley, bread crumbs, Parmesan, salt, pepper and Italian seasoning. Mound mixture evenly in center of each onion half and bake uncovered 20 minutes or until golden. |
