INGREDIENTS:
- 2 pound(s) , Orange Roughy Cut into Bite Size Pieces
- 4 large , Garlic Cloves Chopped
- 2 large , Lemons Cut into Wedges
- 1 1/2 cup(s) , Roma Tomatoes Chopped
- 1/2 cup(s) , Flour
- 1/2 cup(s) , Olives Chopped
- 6 tablespoon(s) , Parmesan Cheese Grated
- 3 tablespoon(s) , Fresh Parsley Chopped
- 2 tablespoon(s) , Olive Oil
- 1 1/2 tablespoon(s) , Lemon Juice
- 2 teaspoon(s) , Black Pepper
- 0 to taste , Salt

Mix flour together with salt and black pepper, then dredge Orange Roughy pieces in flour mix to coat evenly. In a large saucepan, sauté garlic in olive oil over medium-high heat (about 1 minute), then add fish and sauté (8-10 minutes), or until browned on all sides; stir in tomatoes, olives, parsley and lemon juice; cover and cook (1-2 minutes). Serve hot topped with freshly grated Parmesan cheese, to taste - and wedges of lemon to the side. |
