INGREDIENTS:
- 1 whole , onion finely chopped
- 2 whole , garlic cloves finely chopped
- 2 tablespoon(s) , olive oil
- 1 can(s) , tomatoes chopped
- 15 ounces , tomato paste
- 1/2 cup(s) , parsely chopped
- 1/2 cup(s) , basil chopped
- 1 to taste , salt and pepper
- 1 to taste , red pepper flakes
- 4 whole , veal loin chops
- 1 cup(s) , flour
- 1 to taste , salt and pepper
- 2 large , eggs
- 2 tablespoon(s) , milk
- 2 cup(s) , bread crumbs
- 2 tablespoon(s) , olive oil
- 2 tablespoon(s) , butter
- 3/4 cup(s) , parmesan cheese

VEAL PARMESAN
1 Small Onion, Finely Chopped
2 Large Cloves Garlic, Finely Chopped
2 Tablespoons Olive Oil
1 (15 oz) Can Chopped Tomatoes
1/2 Small Can Tomato Paste
1/2 Cup Fresh Chopped Parsley
1/4 Cup Fresh, Chopped Basil
Salt & Pepper
Red Pepper Flakes
Veal:
4 Veal Loin Chops
1 Cup Flour
Salt & Pepper
2 Eggs
2 Tablespoons Milk
2 Cups Bread Crumbs
2 Tablespoons Butter
2 Tablespoons Olive Oil
3/4 Cup Grated Parmesan Cheese
To make the sauce, heat the oil in a saucepan, and once hot add the onions. Cook until translucent, and once softened, add the garlic. Cook for another minute or two, and add the tomatoes, tomato paste and 1 cup of water. Bring to a boil, mixing well. Reduce heat to low, and season with salt, pepper, red pepper flakes, parsley and basil. Cook for an hour, stirring every so often until the sauce is thick and rich.
Season the flour with salt and pepper, and place in a plastic bag. Pound the veal chops until they are 1/4 inch thick. Place each veal chop into the bag with the flour, and shake until it is well coated. Beat the eggs with the milk in a bowl. In a second bowl place the bread crumbs. Dip each veal cutlet first into the egg mixture, and then into the crumbs.
Preheat oven to 350 degrees F. In a frying pan, heat the butter with the olive oil. Once the butter mixture is sizzling, fry the veal slices until golden on each side. Place the veal cutlets side by side in a baking dish. Spoon some of the prepared sauce over the cutlets, and then sprinkle with the parmesan cheese. Bake for 15 to 20 minutes until bubbly and lightly browned. Serve |
