Lamb Shanks With Artichokes

 The Italian Restaurant we usaully go to has wonderful a recipe for Lamb Shanks With Artichokes. I just had to ask for it and share it with others.

INGREDIENTS:
  • 4 whole , large meaty lamb shanks
  • 12 whole , Artichokes Trimmed And Soaked In Lemon Water
  • 1 whole , onion chopped
  • 10 whole , garlic cloves peeled
  • 1 to taste , salt and pepper
  • 2 tablespoon(s) , fresh rosemary chopped
  • 5 tablespoon(s) , olive oil
  • 1/2 cup(s) , Black Olives Pitted And Left Whole
  • 1 cup(s) , white wine
  • 1 cup(s) , chicken broth
  • 1 cup(s) , tomato sauce
  • 1/2 cup(s) , fresh parsely chopped

Instructions:
Preheat the oven to 350 degrees F. Season the shanks with salt and pepper, and brown them well in a ovenproof pan in the olive oil. Remove the shanks to a plate. Add the drained artichokes, onions, garlic and rosemary in the same pan for about 10 minutes, or until the vegetables have softened, and are beginning to brown. Add the wine, olives, tomato sauce, and broth to the pot. Mix well. Return the shanks to the pot, and cover them with the sauce and vegetables. Cover, and cook for 2 hours. Serve the shanks topped with some of the tasty sauce and vegetables
