This is one of the first dishes i cooked in a restaurant. Gorgonzola is like blue cheese. It has a great flavor if you like that sort of thing |

INGREDIENTS:
- 8 large , Beef Fillet Mignon
- 1/2 pound(s) , Gorgonzola Cheese
- 4 tablespoon(s) , Pine Nuts
- 8 slice(s) , Prosciutto
- 4 large , Basil Leaves Chopped
- 0 as needed , Fresh Parsley Chopped
- 0 to taste , Pepper
- 4 ounces , Brown Gravy
- 3 ounces , Dry White Wine
- 4 medium , Fresh Sage Leaves
- 4 ounces , Beef Broth
- 1 ounces , Clarified Butter
- 4 ounces , Flour
- 2 ounces , Parmesan Cheese

| Instructions: |
Mix gorgonzola cheese with pine nuts, basil, parsley, black pepper and parmigianao cheese.
Place mixture in center of pounded filet mignon.
Fold sides over and roll.
Takes slices of spec and roll around the filet mignon.
Dredge in flour and saute in butter until golden brown.
Add sage and white wine, let evaporate for 3 minutes.
Add broth and brown gravy.
Place in a 450° F. preheated oven for 15 minutes and serve.
Serves 4. |
