Carpaccio

 Carpaccio is a great add to any fancy meal. One of my favorite fingerfoods.

INGREDIENTS:
  • 13 ounces , Beef Eye Fillet
  • 1 tablespoon(s) , Extra Virgin Olive Oil
  • 0 to taste , Rocket Leaves Torn
  • 2 ounces , Parmesan Shaved
  • 0 to taste , Black Olives Cut into Slivers

Instructions:
Remove all the visible fat and sinew from the beef, then freeze for 1-2 hours, until firm but not solid. This makes the meat easier to slice thinly.

Cut paper-thin slices of beef with a large, sharp knife. Arrange on a serving platter and allow meat to return to room temperature.

Just before serving, drizzle with oil, and then scatter rocket, Parmesan and olives.

The beef can be cut into slices a few hours in advance, covered and refrigerated. Drizzle with oil and garnish with the other ingredients just before serving.
