Wild Rice and Vegetable Casserole

 Two types of rice, carrot, celery, onion, mushrooms, broccoli, zucchini cheese and more topped with cheese and baked. A very healthy dish.

INGREDIENTS:
  • 1/3 cup(s) , Wild Rice
  • 1/3 cup(s) , Brown Rice
  • 1/2 teaspoon(s) , Salt
  • 1 large , Carrot Julienned
  • 1 large , Onion Chopped
  • 1 large , Celery Stalk Chopped
  • 1 small , Zucchini Julienned
  • 1/2 cup(s) , Broccoli Florets
  • 10 small , Mushrooms Sliced
  • 1 cup(s) , Jack Cheese Grated
  • 1/4 cup(s) , Almonds Sliced

Instructions:
Rinse the rices and cook them together with salt in 2 cups water. Steam vegetables briefly 2-5 minutes. Toss rice and vegetables - turn into shallow baking dish. Top with cheese and nuts and cook under broiler until cheese melts. Serves 4-6.
