Vanilla Rum Pudding

 This has a great flavor, there is only 1 tablespoon of rum if you don't like that sort of thing.

INGREDIENTS:
  • 4 cup(s) , Milk
  • 2 cup(s) , Half and Half
  • 8 large , Egg Yolks
  • 1 1/2 cup(s) , Dark Brown Sugar
  • 1/2 cup(s) , Cornstarch
  • 2 ounces , Butter
  • 1 tablespoon(s) , Vanilla Extract
  • 1 tablespoon(s) , Dark Rum
  • 1/2 teaspoon(s) , Nutmeg

Instructions:
Scald 4 cups milk and 1 cup half and half in saucepan. In a bowl, combine remaining 1 cup half and half with the yolks, brown sugar and cornstarch. Slowly whisk the hot milk mixture into the egg/sugar mixture, then pour all back into saucepan. Whisk over medium heat and bring mixture to a boil - reduce heat to low and continue whisking until mixture is thickened, 2-3 minutes. Add butter, vanilla, rum and nutmeg to pudding and whisk to combine. Strain pudding through a sieve to remove any lumps. Cool completely.
