INGREDIENTS:
- 4 cup(s) , Milk
- 2 cup(s) , Half and Half
- 8 large , Egg Yolks
- 1 1/2 cup(s) , Dark Brown Sugar
- 1/2 cup(s) , Cornstarch
- 2 ounces , Butter
- 1 tablespoon(s) , Vanilla Extract
- 1 tablespoon(s) , Dark Rum
- 1/2 teaspoon(s) , Nutmeg

Scald 4 cups milk and 1 cup half and half in saucepan. In a bowl, combine remaining 1 cup half and half with the yolks, brown sugar and cornstarch. Slowly whisk the hot milk mixture into the egg/sugar mixture, then pour all back into saucepan. Whisk over medium heat and bring mixture to a boil - reduce heat to low and continue whisking until mixture is thickened, 2-3 minutes. Add butter, vanilla, rum and nutmeg to pudding and whisk to combine. Strain pudding through a sieve to remove any lumps. Cool completely. |
