INGREDIENTS:
16 whole , Corn Tortilla Chip Rounds
1/2 cup(s) , Sugar
1 tablespoon(s) , Mexican Cinnamon
1 medium , Banana Cut in 12 Slices
1/2 cup(s) , Candied Pecans
4 sprig(s) , Fresh Mint
Instructions:
Make Banana Pudding (see Below).
Combine sugar and cinnamon - place in sugar shaker and set aside.
To assemble:Place a dab of pudding in the center of each serving plate and top with one crisp tortilla round. Top each tortilla with a dollop of pudding and one slice of banana. Repeat layering twice more with tortillas, pudding and bananas, then top with a final tortilla round. Shake cinnamon sugar over top tortilla. Surround stack with candies pecans and 2-3 mint sprigs.
