Chicken Meatball Grinders

 These are delicious homemade mini subs with chicken instead od beef

INGREDIENTS:
  • 1 can(s) , Diced Tomatoes Drained and Juices Reserved
  • 1 can(s) , Salt Free Tomato Sauce
  • 1/4 cup(s) , Onion Chopped
  • 2 tablespoon(s) , Tomato Paste
  • 1 teaspoon(s) , Dried Italian Seasoning
  • 1 pound(s) , Ground Chicken
  • 1/2 cup(s) , Fresh Breadcrumbs
  • 1 large , Egg White Lightly Beaten
  • 3 tablespoon(s) , Fresh Parsley Finely Chopped
  • 2 large , Garlic CLoves Minced
  • 1/4 teaspoon(s) , Salt
  • 1/8 teaspoon(s) , Pepper
  • 0 as needed , Nonstick Cooking Spray
  • 4 small , Rolls Split
  • 2 tablespoon(s) , Parmesan Cheese Grated

Instructions:
Combine tomatoes, 1/2 cup of the juice, tomato sauce, onion, tomato paste and Italian Seasoniong in a slow cooker. Cover and cook on low for 3-4 hours. Halfway through cooking, prepare meatballs. Combine chicken, breadcrumbs, egg whites, parsley, garlic salt and pepper in a bowl. Fom into 12 meatballs. Spray skillet with cooking spray. Brown meatballs for about 10 minutes; add them to the cooker and cook for 1-2 hours more. Place 3-4 meatballs on rolls, spoon over sauce and top with cheese
