Cuban Black Bean Soup with Cod

 Cod and black beans are a good match. The cooking process is long, but with great reward.

INGREDIENTS:
  • 1 pound(s) , Dry Black Beans Rinsed and Drained
  • 2 can(s) , Chicken Broth
  • 1 can(s) , Diced Tomatoes 14 1/2 oz.
  • 1 can(s) , Green Chilies(4 oz.) Diced
  • 8 ounces , Cod Cut into 1 Inch Pieces
  • 1/2 cup(s) , Onions Minced
  • 2 large , Garlic Cloves Minced
  • 2 tablespoon(s) , Red Wine Vinegar
  • 1 teaspoon(s) , Dried Oregano
  • 2 teaspoon(s) , Dried Thyme
  • 2 teaspoon(s) , Ground Cumin
  • 1/2 teaspoon(s) , Black Pepper

Instructions:
Place beans in a 6 quart slow cooker.
Add water to cover the beans by 4-5 inches.
Cook on low for 8 hours or overnight.
Drain the beans and add the remaining ingredients.
Mix well and cook on low for 8-10 hours
