Cioppino

 Cioppino is a fish stew that was created by the Italian immigrants in Callifornia a long time ago. This is such a delicious soup. And any seafood can be added.

INGREDIENTS:
  • 1 large , Onion Finely Chopped
  • 1/4 cup(s) , Olive Oil
  • 2 large , Garlic Cloves Minced
  • 2 tablespoon(s) , Fresh Parsley Chopped
  • 16 ounces , Canned Tomatoes
  • 8 ounces , Tomato Sauce
  • 1 tablespoon(s) , Fresh Basil Chopped
  • 8 ounces , Clam Juice
  • 1 pound(s) , Cod or Hallibut
  • 1/2 pound(s) , Fresh Shrimp
  • 1/2 pound(s) , Bay Scallops
  • 0 to taste , Fresh Black Pepper

Instructions:
Also any other seafood item preferred, such as Crabs, Lobster Tails, etc. or none.

Saute onion in oil until glazed. Add garlic and parsley, saute a few minutes. Turn into crock pot. Add tomatoes, tomato sauce, pepper, basil and Clam Juice. Cover and cook on low two hours or on high one hour. Cut fish into 2" cubes. Add fish cubes, and remaining seafood to sauce. Cover. Cook on high 30 minutes or until Shrimp turns pink and fish flakes when tested with a fork. Ladle into large soup bowls.
