Pumpkin Cookies

 These are similer to pumpkin pie, only healthier and very delicious.

INGREDIENTS:
  • 1 cup(s) , Vegetable Oil
  • 3 cup(s) , Granulated Sugar
  • 2 large , Eggs Beaten
  • 3 teaspoon(s) , Vanilla
  • 5 cup(s) , Flour
  • 2 teaspoon(s) , Baking Powder
  • 2 teaspoon(s) , Baking Soda
  • 2 teaspoon(s) , Nutmeg
  • 2 teaspoon(s) , Cinnamon
  • 1 teaspoon(s) , Allspice
  • 1/4 teaspoon(s) , Ground Ginger
  • 1 3/4 teaspoon(s) , Salt
  • 29 ounces , Pumpkin Puree
  • 2 cup(s) , Semisweet Chocolate Chips
  • 1 cup(s) , Walnuts Chopped

Instructions:
Pre-heat oven to 350 F. Beat oil and sugar in mixing bowl. Add eggs and vanilla, beating well. Sift flour, baking powder, baking soda, spices, and salt together. Add to sugar mixture alternately with pumpkin, beating well after each addition. Fold in chocolate chips and nuts. Drop by teaspoonfuls onto greased cookie sheets. Bake for 10 to 12 minutes or until golden brown. Cool on wire rack.
