Chunky Brazil Nut Drop Cookies

 Brazil nuts aren't seen much in cookie recipes. I hope you like this one.

INGREDIENTS:
  • 1/2 cup(s) , Shortning
  • 1/2 cup(s) , Butter
  • 1 cup(s) , Sugar
  • 2 large , Eggs
  • 1 1/2 teaspoon(s) , Vanilla
  • 2 1/4 cup(s) , A.P. Flour Sifted
  • 1/2 teaspoon(s) , Baking Soda
  • 1/4 teaspoon(s) , Salt
  • 2 cup(s) , Brazil Nuts Quartered
  • 1/2 cup(s) , Coconut Shredded

Instructions:
Cream shortening, butter, and sugar until light. Beat in eggs and vanilla. Sift together the flour, soda, and salt; stir into the creamed mixture until well blended. Stir in the Brazil nut pieces and coconut.
With a teaspoon, drop cookie dough onto lightly greased baking sheet, spacing about 2 inches apart. Bake at 350° for about 12 to 15 minutes.
