Blueberry And Peach Cobbler

 To make this judiciously sweet cobbler, blueberries are lightly sugared and flavored with orange juice, and then topped with a light and airy batter. And within 40 minutes, this cobbler bakes up bubbly and beautiful.

INGREDIENTS:
  • 2 tablespoon(s) , sugar
  • 2 tablespoon(s) , brown sugar
  • 1 tablespoon(s) , cornstarch
  • 1/2 cup(s) , water
  • 1 tablespoon(s) , lemon juice
  • 2 cup(s) , peeled sliced fresh peaches
  • 1 cup(s) , blueberries
  • 1 cup(s) , all purpose flour
  • 1 1/2 teaspoon(s) , baking powder
  • 1/2 teaspoon(s) , salt
  • 1/2 cup(s) , milk
  • 1/4 cup(s) , butter

Instructions:
TOPPING:
1 c. all-purpose flour
1/4 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1/4 c. butter or margarine, softened


In a saucepan, combine first 5 ingredients. Bring to a boil, stirring until thick. Add fruit and pour into a 2 quart baking dish. For topping, combine flour, sugar, baking powder and salt in a mixing bowl. Stir in milk and butter. Spread over fruit mixture and bake at 375 degrees for 50 minutes or until topping is golden brown and tests done. Serve warm.
