INGREDIENTS:
- 2 whole , 4-5 Pound Ducklings
- 12 ounces , Pork Sausage
- 1/2 cup(s) , Onions Chopped
- 1/2 cup(s) , Celery Chopped
- 1 cup(s) , Apple Chopped
- 1 cup(s) , Golden Raisins
- 1/2 cup(s) , Water
- 1 1/4 teaspoon(s) , Salt
- 1 teaspoon(s) , Dried Sage
- 1/4 teaspoon(s) , Pepper
- 2 tablespoon(s) , Parsley Chopped
- 8 cup(s) , Bread Dried and Cubed
- 3 whole , Eggs Slightly Beaten
- 1/2 cup(s) , Chicken Broth

Clean and rub the insides of the duckling with the salt, prick skin all over and set aside. In a large skillet, cook sausage with onion and celery until the sausage is done and the vegetables are tender. Add apple and simmer for 3 minutes, stirring occasionally; drain. meanwhile, simmer raisins in water for 8 minutes; do not drain. In large bowl, combine sausage mixture, raisins, salt, sage, pepper, and parsley; mix well. Add the bread cubes, eggs, and broth; mix lightly. Divide and spoon into the two ducklings. Place with breast side up on rack in a large shallow roasting pan. Bake uncovered at 375/o for 1 34 to 2 1/4 hours or until thermometer reads 185/o Drain fat off as it accumulates. Remove all the dressing from the birds. then serve |
