INGREDIENTS:
- 2 medium , Carrots Sliced
- 1/2 cup(s) , Celery Sliced
- 1 small , Onion Chopped
- 1 large , Garlic Clove Minced
- 1/4 teaspoon(s) , Dried Oregano
- 1/4 teaspoon(s) , Red Pepper Flakes
- 6 medium , Chicken Thighs Boneless, Skinless
- 1/4 cup(s) , Flour
- 1 teaspoon(s) , Salt
- 1/2 teaspoon(s) , Pepper
- 1 tablespoon(s) , Vegetable Oil
- 1 can(s) , Chicken Broth
- 6 small , French Bread Baguettes Split and Toasted
- 6 slice(s) , Swiss Cheese

Place first 6 ingredients in a slow cooker. Trim fat from chicken. Combine flour, salt and pepper in a large zip top bag. Add chicken, shake to coat. Heat oil in a skillet, add chicken and brown it. Place chicken over vegetables in slow cooker. Cover; cook on low for 5-6 hours. Place 1 chicken piece on the bottom of a baguette, spoon a little broth over it and top with cheese |
