Chinese Chicken Salad

 This is a delightful dish that makes a great light lunch.

INGREDIENTS:
  • 1/4 cup(s) , Peanut Oil
  • 2 tablespoon(s) , Sesame Oil
  • 1 large , Garlic CLove
  • 1 tablespoon(s) , Sugar
  • 3 tablespoon(s) , Rice Vinegar
  • 2 tablespoon(s) , Soy Sauce
  • 1/4 cup(s) , Peanut Butter
  • 2 tablespoon(s) , Sesame Paste
  • 0 to taste , Salt and Pepper
  • 1 teaspoon(s) , Chili Paste
  • 2 cup(s) , Chicken Breasts Poached and Torn into Pieces
  • 2 cup(s) , Macaroni Cooked
  • 10 ounces , Frozen Green Peas Thawed
  • 2 large , Scallions Green Part Only; Thinly Sliced
  • 1/2 tablespoon(s) , Cilantro Chopped

Instructions:
In a food processor or blender, combine and puree the peanut and sesame oils, garlic, sugar, rice vinegar, soy sauce, peanut butter
and sesame paste. Season to taste with salt and pepper. If you wish, stir in chili paste.

Right before serving toss the chicken, macaroni and peas with the sauce and garnish with scallions and cilantro
