Key Lime Pudding Cake

 Key limes have a great flavor. they are smaller and more tart than regular limes, if you can't find key limes, use regular limes, but if you can find the key limes, by all means use them.

INGREDIENTS:
  • 1/2 cup(s) , Sugar
  • 3 cup(s) , Flour
  • 3 tablespoon(s) , Butter Melted
  • 2 large , Eggs Room Temp; Seaparted
  • 3 tablespoon(s) , Key Lime Juice
  • 1 teaspoon(s) , Key Lime Zest Grated
  • 1 cup(s) , Milk Room Temp.

Instructions:
Preheat oven to 325 degrees F. Grease a 1-quart baking pan or 6 custard cups.

Combine sugar, flour and melted butter in a mixing bowl. Add the unbeaten egg yolks, lime juice, lime rind and milk.

Beat egg whites until stiff; fold into yolk mixture.

Pour into pan or custard cups. Place in pan of hot water; bake 1 hour (35 minutes for custard cups), until pudding leaves sides of pan.
