INGREDIENTS:
- 1 1/2 cup(s) , Vegetable Oil
- 2 cup(s) , Granulated Sugar
- 3 large , Eggs
- 2 teaspoon(s) , Vanilla Extract
- 3 cup(s) , Self-Rising Flour
- 3 whole , Peaches plus 2 Tbls. Chopped
- 0 to taste , Coconut
- 3 ounces , Cream Cheese
- 1 1/2 whole , Boxes of Confectioner's Sugar

| Instructions: |
Mix first 7 ingredients (minus the 2 Tbls. Of peaches) in a mixing bowl and bake in a greased bundt pan at 350º for 1 hour.
Frosting: Combine 2 Tbls. peaches, cream cheese and confectioners’ sugar. Pour over cooled cake. |
