INGREDIENTS:
- 2 cup(s) , Sugar
- 1 pound(s) , Butter
- 1 pound(s) , White Raisins
- 1 quart(s) , Pecans
- 2 ounces , Lemon Extract
- 3 cup(s) , A.P.Flour
- 6 large , Eggs Separated
- 1 teaspoon(s) , Baking Soda Dissolved in 1 tt of Water

| Instructions: |
Cream butter and sugar. Add beaten egg yolks. Mix flour with raisins and nuts. Add dissolved soda to mixture. Add lemon extract. Fold in stiffly beaten egg whites. Bake in tube pan - greased, then lined with wax paper and greased again, at 250 degrees for 2 3/4 hours.
Important: Place pan of water in oven under pan. First Hour: Bake with aluminum foil lying over cake, then remove it. Keep in a cool place so it won't crumble when sliced. |
