Blueberry Pudding Cake

 This is a soft, luscious cake that you will love. It like blueberry muffins times 10!

INGREDIENTS:
  • 2 cup(s) , Blueberries
  • 2 tablespoon(s) , Lemon Juice
  • 1 cup(s) , Flour
  • 2 teaspoon(s) , Baking Powder
  • 1/4 teaspoon(s) , Salt
  • 1/2 teaspoon(s) , Nutmeg
  • 1 3/4 cup(s) , Sugar
  • 1/2 cup(s) , Milk
  • 1 large , Egg
  • 1/4 cup(s) , Butter Melted
  • 1 teaspoon(s) , Vanilla
  • 1 tablespoon(s) , Cornstarch
  • 1 cup(s) , Boiling Water

Instructions:
Place blueberries and lemon juice in an 8x8 inch pan. Mix flour, baking powder, salt, nutmeg, and 3/4 cup sugar. Beat in milk, egg, melted butter, and vanilla. Spread over berries. Mix 1 cup sugar with cornstarch and sprinkle over batter. Pour boiling water over all. Bake at 350° for 40 - 50 minutes.
