INGREDIENTS:
- 2/3 cup(s) , Sugar
- 1 1/2 cup(s) , Fresh Cranberries
- 1 1/2 cup(s) , Orange Juice
- 1 cup(s) , A.P.Flour
- 2 teaspoon(s) , Orange Zest Grated
- 1 1/2 teaspoon(s) , Baking Powder
- 1/4 teaspoon(s) , Salt
- 1/2 cup(s) , Skim Milk
- 1 teaspoon(s) , Vanilla Extract
- 0 as needed , Non-stick Cooking Spray

| Instructions: |
Combine 1/3 c. sugar, cranberries, grated orange rind and orange juice in a saucepan. Bring to a boil; cook for 2 minutes or until cranberry skins pop, stir occasionally. Set aside.
Combine remaining sugar, flour, baking powder and salt in a medium bowl; stir well. Combine milk and vanilla; add to dry ingredients, stirring just until moistened. Spoon into a shallow 2-quart cassarole coated with cooking spray.
Pour cranberry mixture evenly over batter. Bake at 350ºF for 40 minutes. Serve warm. |
