Zucchini Bread

 This may sound wierd, but it is very good, my friends dad made it for me, and I fell in love with it.

INGREDIENTS:
  • 4 cup(s) , Zucchini Coarsley Shredded
  • 3 cup(s) , Flour
  • 2 1/2 cup(s) , Sugar
  • 1 1/4 cup(s) , Vegetable Oil
  • 4 large , Eggs Beaten
  • 1 tablespoon(s) , Vanilla Plus 1 tsp.
  • 1 tablespoon(s) , Ground Cinnamon
  • 1 1/2 teaspoon(s) , Salt
  • 1 1/2 teaspoon(s) , Baking Soda
  • 1/2 teaspoon(s) , Baking Powder
  • 1 cup(s) , Nuts Chopped (optional)

Instructions:
Heat oven to 325 degrees. Grease generously bottoms only of 2 loaf pans, 9"x5"x3". Blend all ingredients on low speed 1 minute, scraping bowl constantly. Beat on medium speed 1 minute. Pour into pans. Bake until wooden pick inserted in center comes out clean, 50 minutes to 1 hour. Cool 10 minutes, remove from pans. Cool completely.
