INGREDIENTS:
- 4 cup(s) , Zucchini Coarsley Shredded
- 3 cup(s) , Flour
- 2 1/2 cup(s) , Sugar
- 1 1/4 cup(s) , Vegetable Oil
- 4 large , Eggs Beaten
- 1 tablespoon(s) , Vanilla Plus 1 tsp.
- 1 tablespoon(s) , Ground Cinnamon
- 1 1/2 teaspoon(s) , Salt
- 1 1/2 teaspoon(s) , Baking Soda
- 1/2 teaspoon(s) , Baking Powder
- 1 cup(s) , Nuts Chopped (optional)

Heat oven to 325 degrees. Grease generously bottoms only of 2 loaf pans, 9"x5"x3". Blend all ingredients on low speed 1 minute, scraping bowl constantly. Beat on medium speed 1 minute. Pour into pans. Bake until wooden pick inserted in center comes out clean, 50 minutes to 1 hour. Cool 10 minutes, remove from pans. Cool completely. |
