Devilled Crab in Cucumber Cups

 Devilled Crab in Cucumber Cups are an easy and fun way to being a meal.

INGREDIENTS:
  • 3 cup(s) , Crab Meat Cooked
  • 2 whole , Hard Boiled Eggs Chopped
  • 1/4 cup(s) , Lemon Grass Sliced Fine
  • 1/4 cup(s) , Onion Chopped
  • 2 tablespoon(s) , Nam-Prik Pao
  • 2 tablespoon(s) , Fish Sauce
  • 3 tablespoon(s) , Lime Juice
  • 1 tablespoon(s) , Sugar
  • 2 tablespoon(s) , Scallions Chopped
  • 2 tablespoon(s) , Corianders Leaves Chopped
  • 3 whole , Cucumbers

Instructions:
Mix all ingredients together and fill cucumber cups. To make cucumber cups: Peel and cut cucumber crosswise approximately 3 inches thick, and scoop out seeds to make cups. Mix 1/2 cup white vinegar with 1/2 cup water, 1 tb salt, and 1/4 cup sugar. Add the cucumber cups and marinate for about 1/2 hour, then drain off and discard liquid.
