Thai Crab Cakes

 Crab Cakes are one of my favorite appetizers. This particular recipe has lots of contrasting flavors

INGREDIENTS:
  • 1 pound(s) , Crab Meat
  • 6 medium , Lime Leaves Finely Chopped
  • 3 medium , Scallions Roughly Chopped
  • 2 small , Hot Red Chilies Finely Chopped
  • 3 ounces , White Bread Crumbs
  • 1/4 cup(s) , Coriander Leaves
  • 2 tablespoon(s) , Mayonnaise
  • 1 teaspoon(s) , Fish Sauce
  • 0 as needed , Olive Oil

Instructions:
Put all the ingredients, except olive oil, into a food processor and process until just mixed; chill for 15 minutes or longer. Shape the mixture into flat patties, about 2" in diameter and dust each with a small amount of flour; fry in shallow hot oil until crisp (3-4 minutes, on each side). Serve with rice and a green salad.
