Shrimp and Pepper Rajas

 This is a great appetizer for all those shrimp lovers out there.

INGREDIENTS:
  • 3 medium , Bell Peppers Halved
  • 1 bunch , Scallions Chopped
  • 8 large , Shrimp
  • 1 cup(s) , Pepper Jack Cheese Shredded

Instructions:
In a nonstick skillet or a nonstick griddle over medium high heat, arrange the peppers and scallions so they are evenly distributed and attractive. Cook until brown on the bottom, about 8 to 10 minutes.
Top with shrimp and sprinkle with cheese. Remove from heat when cheese is melted.Serves 6 to 8 as appetizers.
